use gradient if the AVI captured is in relatively good to excellent seeing, OR you want to (and strictly) choose the best frames only to stack. The algorithm for gradient is quite strict in this sense and can reject a vast majority of the frames with sub-standard seeing quality. Compress is fine for general work. Please make sure you have a good reference frame to work with as well, as it will determine the alignment quality of all your chosen frames for stacking.

If seeing is excellent, then choosing multiple alignment points gives very good results. Otherwise just 1 or 2 alignment points will do.

Remus is very right, choosing a good reference frame will make all the difference.
