What are the Pros and Cons between these two cameras? I have seen the specs, but I'm still not clear about it.

Umm..when I bought the Mallincam, the S3 is not out yet. But I will probably stick with Mallincam even if S3 is there. Mallincam is a hand assembled, piece-by-piece product. Stellacam is a mass produce product. That tells you something. If you are not happy with the Mallincam, there is a manufacturer (Rock Mallin) whom you can speak to. Mine has his signature on it. It tells you how proud he is in assembling and customising these cameras.
Between S2 and Mallincam Hyper Colour Plus, the biggest difference is colour of course (S2 is B/W). Besides that, S2 allows a max integration of 8 seconds. The early Hyper Colour allows integration of up to 12 seconds, but even 2 seconds is already as good as the 8 seconds in the S2. The 12 seconds integration is a league of its own, way beyond any other video camera could achieve. And the Hyper colour has a cooler built-in which the S2 does not.
The newer Hyper Colour which he called the Plus version has integration of 7, 14, 28 and up to a whopping 56 seconds! I send my older Hyper Colour for him to upgrade in which he also sign his signature on it. I have not tried the 28 and 56 seconds, but I think if there is a dark sky and a good mount, the effect can be very dramatic to truly shocking.
The S3 is also a monochrome camera and the only selling point is the unlimited exposure time. Although it sounds great, but read the fine prints. It says "do not overexpose as it may damage the CCD chip". So is the main selling point truly valid? You judge yourself.
Hence, IMO, the best balance for awesome views on the monitor is still by Mallincam. It has colour, it has reasonable integration time, and it has someone behind who is proud to stand by his products.

The best video experience I had was when I did this video thing at dempsey. A car drove past and they got down to see. A guy and a girl. Obviously they had just finished partying or some dinner function. Orion nebula was on the monitor. His jaw dropped (I think he woke up from his drunk-like state) He looked up the sky, he couldn't see anything. And there it was on the monitor with M42 filling up the 8" screen with all the nebulosity in full colour. He said that was the most awesome thing he had ever seen live and he must get his kids to learn it.
The effect can be pretty dramatic on non-astro crowds. Video shots that I put here cannot replace that effect. It's the same like seeing a live meteor and seeing one on pictures. Different feeling and effect.
